Here’s news that Aqui Cal-Mex fans can toast with a Cabo Wabo Prickly Pear-Tequila Swirl:
The homegrown chain is expanding for the first time in eight years.
Look for a new San Jose restaurant at Waterford Plaza on West Capitol Expressway, halfway between Highway 87 and Snell Avenue, to open in August or September. This location will have a slightly smaller footprint than some of the others, a spokeswoman said, but a few “twists” are promised.
Aqui last opened a new restaurant back in 2010. That was the Cupertino one, the company’s fourth after two San Jose eateries and one in Campbell.
Founded in 1994 in Willow Glen by entrepreneur David O’Mara and executive chef Rob Francis, Aqui Cal-Mex specializes in organic, affordable fare. The newest Tuesday special, for example, is a California Duck Flauta, all-natural local duck served with roasted Brussels sprouts and other organic vegetables, brown rice, firecracker chile sauce, pickled red onions and more for $12.49.
The restaurant was one of the first in the valley to embrace the fast-casual counter-service model.

According to its website, Aqui is also interested in future locations in Morgan Hill, Mountain View, Santa Clara, the Eastridge Mall area, Santa Cruz and Sacramento.
